Is an edit ever going to be made that includes ALL MCU footage? I.e. Helstrom, Spiderman movies, Hulu, Netflix, scenes titled "Other" in the Google doc, etc? I noticed the edits only include the movies or Disney+ stuff. I can't be the only one thinking this.

Yeah, I know what's TECHNICALLY canon according to the big heads, but after No Way Home, as far as I'm concerned, it's all canon! Multiverse and all that jazz. I absolutely love what Dirty30m has put together so far, don't get me wrong, but I would also love it if something like that could be made separately, like how he did the "What if" Battle of New York. I know that's a lot to ask though, that's a LOT of extra editing hahaha.
Officially (and currently), only the Paramount/Disney Marvel films (plus Universal's The Incredible Hulk and SONY's Spider-man "Home" trilogy), the One-Shots, and the Disney+ shows are considered canon by Kevin Feige. All other shows and media were declared non-canonical when Disney+ was announced a few years back, coinciding with the closure of Marvel Television. Several Marvel Television shows including Marvel's Agents of SHIELD Season 7, Daredevil Season 3, Jessica Jones Season 3, The Runaways Season 3, Cloak & Dagger Season 2, and Helstrom had already been greenlit and were in production at the time, so were allowed to air, but they were no longer considered canon by the time that they aired.
All of the "Other" media has never been canon and much of its makes little sense to be considered canon, especially the blatant commercials. As it is, Dirty30m is pushing against canon by including some of the clearly non-canonical deleted scenes and other media, such as marketing in-universe material that has ambiguity regarding its canonicity. Rather than include everything, I would prefer that most deleted scenes that haven't had their special effects completed be removed—they often are jarring to me while watching the film. I especially dislike CGI Hulk in Ragnarok and Peter Quill's several takes talking to a poorly-rendered teenage Groot.
I am, however, very much in favor of a separate Netflix/Hulu/Freeform cut for all of those shows since they overlap some and have clear connections to each other. Then people could watch them separately if they wanted.
